Step-by-Step Instructions
  1. Begin by preheating your oven to 375°F (190°C). Gather your ingredients.
  2. Season the chicken thighs with salt and pepper. Melt 2 tablespoons of butter in a skillet over medium heat, then add chicken skin-side down and sear for 4-5 minutes.
  3. Flip the chicken and cook for another 3 minutes until golden brown. Remove from skillet.
  4. In the same skillet, add thinly sliced onions and apples. Sauté over medium heat for 5 minutes until onions are translucent.
  5. Pour in 1 cup of chicken broth, scraping the bottom of the skillet to deglaze. Return chicken to the skillet skin-side up.
  6. Pour 1 cup of heavy cream over the chicken and sprinkle with fresh thyme. Stir gently to combine.
  7. Transfer the skillet to the oven and bake for 30-35 minutes until bubbling and chicken reaches 165°F (74°C).
  8. Let the casserole rest for 5 minutes before serving.
