Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded rotisserie chicken, uncooked white rice, chicken broth, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Stir until well mixed.
- If using, gently fold in frozen peas and carrots.
- Lightly grease your 9x13 inch baking dish and pour the mixture in, smoothing the top.
Baking
- Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
- Remove foil and sprinkle shredded mozzarella cheese on top. Return to the oven for 10-15 minutes, until cheese is melted.
- Allow to cool for a few minutes before serving.

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen before baking for up to 3 months. Warm it up in the oven or microwave.
