Casserole Base
  • 3 cups Shredded Rotisserie Chicken Any cooked chicken can be used as a substitute.
  • 1 cup Uncooked White Rice Brown rice can be used; adjust cooking time.
  • 3 cups Chicken Broth Vegetable broth is a suitable alternative.
  • 2 cups Alfredo Sauce Can substitute with homemade white sauce or creamy mushroom soup.
Seasoning
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a stronger taste.
  • 1 teaspoon Italian Seasoning Replace with Italian spice blends or fresh herbs.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

  • 1 cup Frozen Peas and Carrots Optional; fresh vegetables can be used.
Topping
  • 2 cups Shredded Mozzarella Cheese Experiment with different cheeses based on preference.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded rotisserie chicken, uncooked white rice, chicken broth, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Stir until well mixed.
  3. If using, gently fold in frozen peas and carrots.
  4. Lightly grease your 9x13 inch baking dish and pour the mixture in, smoothing the top.
Baking
  1. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  2. Remove foil and sprinkle shredded mozzarella cheese on top. Return to the oven for 10-15 minutes, until cheese is melted.
  3. Allow to cool for a few minutes before serving.
