- Preheat your oven to 375°F (190°C).
- Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden-brown. Remove the chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds. Then, add the sliced mushrooms and cook for 5-7 minutes.

- Return the chicken to the skillet and nestle it in the sauce. Sprinkle cheddar and Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes until the chicken reaches 165°F (74°C) and the cheese is melted and bubbly.
