Step-by-Step Instructions
  1. Prepare by chopping two medium onions, mincing garlic, grating Parmesan, and cutting bacon into small pieces.
  2. In a skillet, melt 2 tablespoons olive oil with 1 tablespoon butter, then add onions and caramelize for 15-20 minutes.
  3. Cook the chopped bacon in the same skillet over medium-high heat for 5-7 minutes until crispy.
  4. Sauté minced garlic in remaining fat, then add 1 ½ cups Arborio rice and toast for 1-2 minutes.
  5. Stir in ½ cup white wine and let evaporate for 2-3 minutes.
  6. Gradually add 4 cups broth one ladle at a time, stirring until absorbed, for about 20-25 minutes.
  7. Once creamy, add caramelized onions, crispy bacon, and ¾ cup Parmesan, stirring until melted.
  8. Serve in bowls, garnishing with black pepper and herbs if desired.
