Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and tools.
  2. In your skillet over medium heat, add a splash of oil and sauté diced onions for about 5–7 minutes until soft.
  3. Add pumpkin puree and black beans to the skillet, mixing thoroughly, and cook for an additional 3–5 minutes.
  4. Spread a layer of enchilada sauce across the bottom of the casserole dish.
  5. Layer a tortilla over the sauce, spoon the pumpkin and bean mixture on top, and sprinkle with cheddar cheese. Repeat layers.
  6. Finish off with a final tortilla topped with the remaining cheese, and drizzle leftover enchilada sauce if desired.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake uncovered for an additional 10 minutes until the top layer is golden.
  9. Let the casserole cool for about 5–10 minutes before serving.
