- Preheat your oven to 350°F (175°C) and grease a medium-sized baking dish with butter or olive oil.

- Dice the chicken into bite-sized pieces and sauté in olive oil in a large skillet on medium heat for about 5–7 minutes.

- In a large mixing bowl, combine the cooked rice, French onion soup, and sour cream; mix in half of the shredded cheese well.

- Fold the sautéed chicken into the rice mixture until evenly distributed.

- Pour the mixture into the greased baking dish, spread evenly, top with remaining cheese and sprinkle crispy fried onions.

- Cover with aluminum foil and bake for 25 minutes, then uncover and bake for an additional 10–15 minutes until bubbly and golden brown.

- Remove from the oven, let it rest for about 5 minutes, then serve and enjoy!
