Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Chop your chosen vegetables: dice bell peppers, slice mushrooms, and chop spinach or kale.
  3. Mix the cottage cheese with olive oil, salt, and pepper in a bowl until creamy.
  4. Spread the marinara sauce evenly in an oven-safe dish.
  5. Spoon the cottage cheese mixture over the marinara sauce, spreading evenly.
  6. Layer in the chopped bell peppers, followed by mushrooms and spinach or kale. Top with shredded mozzarella.
  7. If using, sprinkle optional toppings like olives, onions, or basil on top.
  8. Bake in the preheated oven for about 20 minutes until cheese is melted and bubbly.
  9. Allow to cool for a couple of minutes, then serve and enjoy hot.
