Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by greasing it or lining it with parchment paper.
- In a food processor, blend cottage cheese until smooth, then transfer to a mixing bowl.
- Add granulated sugar, honey or maple syrup, and vanilla extract to the bowl, and mix well for about 1–2 minutes.
- Crack in the eggs one at a time, mixing well after each addition until frothy.
- In a separate bowl, whisk together cocoa powder, all-purpose flour, and baking powder.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared dish and smooth out the top.
- Bake for 25–30 minutes, checking for doneness with a toothpick.
- Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
