Step-by-Step Instructions for Cottage Cheese and Veggie Bake
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, toss together the zucchini, red bell pepper, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 15 minutes.
  3. In a separate mixing bowl, combine the cottage cheese, eggs, and half of the shredded mozzarella. Mix until well-blended.
  4. Lightly grease your baking dish with olive oil. Layer the roasted veggies evenly in the dish, pour the creamy cottage cheese mixture over, and sprinkle the remaining mozzarella and Parmesan on top.
