- Season the cod fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the cod for 3-4 minutes on each side until opaque and flaky.
- In the same skillet, reduce heat to medium and add onion and garlic. Sauté for about 2 minutes until translucent.
- Add roasted red peppers and paprika to the skillet. Stir and cook for 2 minutes, seasoning with salt and pepper.
- Pour in heavy cream and broth, stirring to combine. Bring to a gentle simmer for 3-4 minutes.
- Remove from heat and blend the sauce until smooth. Adjust consistency with more broth if needed.
- Return blended sauce to skillet and add cod fillets, warming through for 2-3 minutes.
- Serve by plating cod and spooning sauce on top. Garnish with parsley and lemon juice.
