  • 4 fillets Cod Fresh or thawed frozen
For the Sauce
  • 2 tablespoons Olive Oil Can be replaced with canola or avocado oil
  • 1 whole Onion Diced; substitute with shallots for milder flavor
  • 2 cloves Garlic Minced; or use garlic powder
  • 1 cup Roasted Red Peppers Jarred or homemade
  • 1 teaspoon Paprika Smoked paprika enhances flavor
  • ½ cup Heavy Cream Coconut milk for dairy-free option
  • ½ cup Broth Vegetable or chicken broth
  • to taste Salt
  • to taste Pepper
For Garnishing
  • 2 tablespoons Fresh Parsley Chopped; optional
  • 1 tablespoon Lemon Juice For added flavor

Method
 

Cooking Instructions
  1. Season the cod fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the cod for 3-4 minutes on each side until opaque and flaky.
  2. In the same skillet, reduce heat to medium and add onion and garlic. Sauté for about 2 minutes until translucent.
  3. Add roasted red peppers and paprika to the skillet. Stir and cook for 2 minutes, seasoning with salt and pepper.
  4. Pour in heavy cream and broth, stirring to combine. Bring to a gentle simmer for 3-4 minutes.
  5. Remove from heat and blend the sauce until smooth. Adjust consistency with more broth if needed.
  6. Return blended sauce to skillet and add cod fillets, warming through for 2-3 minutes.
  7. Serve by plating cod and spooning sauce on top. Garnish with parsley and lemon juice.

Notes
