Step-by-Step Instructions
- In a medium saucepan, melt 1 cup of unsalted butter over medium heat until golden brown and nutty, about 5–7 minutes.
- In a large mixing bowl, combine the browned butter with 3/4 cup of brown sugar and 1/4 cup of granulated sugar. Beat until smooth and creamy, about 2–3 minutes.
- Whisk in 2 large eggs until fully incorporated and glossy, about 1 minute.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 tsp of baking soda, 1 tbsp of cinnamon, and 1/4 tsp of salt. Fold these dry ingredients into the wet mixture.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Scoop tablespoon-sized portions onto parchment-lined baking sheets and bake at 350°F (175°C) for 10–12 minutes.
- Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes
For best results, slightly underbake cookies and refrigerate dough to prevent spreading.
