  • 2 cups Chicken Broth Can substitute with vegetable broth.
  • 1 cup Heavy Cream/Evaporated Milk For dairy-free, use coconut milk.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Sugar Optional, to balance spiciness.
For the Finish
  • 1/4 cup Fresh Cilantro For garnish.
  • 3 cups White Rice/Quinoa/Fried Plantains Suggested sides.

Step-by-Step Instructions
  1. Season the Chicken: Rub salt and black pepper onto the chicken thighs or breasts, let it rest for 10 minutes.
  2. Sear the Chicken: Heat olive oil in a skillet, add chicken, and sear for 4-5 minutes on each side. Remove from skillet.
  3. Sauté the Aromatics: Add olive oil if necessary, sauté onion for 5 minutes, then add garlic and cumin for another minute.
  4. Incorporate Ají Amarillo Paste: Stir in ají amarillo paste and cook for 2 minutes.
  5. Add the Chicken Broth: Pour in chicken broth, scrape browned bits, and bring to a simmer.
  6. Create the Creamy Sauce: Stir in heavy cream or evaporated milk, mix until smooth, about 3-4 minutes.
  7. Combine and Simmer: Return chicken to skillet, cover with sauce, and simmer for 5 minutes.
  8. Final Touches: Adjust seasoning and garnish with cilantro.
  9. Serve and Enjoy: Serve over rice, quinoa, or plantains.
