- In a large skillet, heat 2 tablespoons of olive oil over medium heat until it shimmers.
- Add 1 pound of ground beef to the skillet and cook, breaking it apart with a spatula for 5-7 minutes until fully browned.
- Incorporate 1 chopped onion and 2 minced garlic cloves into the skillet and sauté for 3-4 minutes.
- Add 3 peeled and diced medium potatoes, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano. Stir for 1-2 minutes.
- Pour 1/2 cup of beef broth over the mixture, reduce heat to low, and allow to simmer for 20-25 minutes.
- Once the potatoes are tender, uncover and sprinkle 1 cup of shredded cheddar cheese on top, cover, and cook for 2-3 minutes until melted.
- Remove from heat and sprinkle with 1 tablespoon of chopped fresh parsley before serving.
