- Start by measuring out 6 cups of Rice Chex cereal into a large mixing bowl. Line a baking sheet with parchment paper and set aside.
- Crush the apple chips in a ziplock bag using a rolling pin until small bits are formed, and set aside.
- Combine 1 cup of caramel bits, 1 cup of white chocolate chips, and 2 tablespoons of butter in a microwave-safe bowl. Microwave in 30-second intervals until smooth.
- Stir in ½ teaspoon of vanilla extract and a pinch of salt, then pour this mixture over the Rice Chex cereal and fold gently.
- In a gallon ziplock bag, combine 1 cup of powdered sugar, ¼ cup of granulated sugar, and 1 tablespoon of apple pie spice. Add the coated cereal and shake until coated.
- Spread the mix onto the baking sheet and sprinkle the crushed apple chips on top. Allow to cool for 10-15 minutes before enjoying.
