For the Vegetables
  • 1 medium Red bell pepper Can be swapped with other bell peppers.
  • 1 medium Jalapeño pepper Use less for a milder dish.
  • 2 slices Orange slices Fresh orange is preferred.
  • 2 tbsp Green onions Chives can be used if unavailable.
  • 1 tbsp Parsley Any fresh herb can substitute.
For Finishing Touches
  • 1 tbsp Brown sugar Coconut sugar can be a healthier alternative.
  • to taste Salt Adjust to taste.
  • to taste Pepper Adjust to taste.

Step‑by‑Step Instructions
  1. Prepare the Chicken: Trim any excess fat from the chicken breasts and slice them into 1-inch wide strips.
  2. Make the Marinade: In a large zip-top bag, combine honey, orange juice, brown sugar, both mustards, Cajun seasoning, chopped garlic, and salt and pepper. Add the chicken strips, seal the bag, and shake gently until coated. Marinate in the refrigerator for at least 30 minutes or up to 8 hours.
  3. Cook the Chicken: Heat a large skillet over medium-high heat, add chicken and marinade, and bring to a bubbling simmer for 2-3 minutes.
  4. Simmer for Flavor: Reduce heat to medium-low and let simmer uncovered for 25-30 minutes until the sauce thickens and chicken is cooked through.
  5. Add the Vegetables: With 5 minutes left, add red bell pepper, jalapeño, and orange slices; toss gently.
  6. Serve and Garnish: Serve chicken and veggies over rice or quinoa and garnish with green onions and parsley.
