  2. Using your hands, take portions of the chicken mixture and shape them into 3-inch long sticks. Place on a parchment-lined baking sheet and freeze for at least 30 minutes.
  3. Gather three shallow bowls, filling one with flour, the second with beaten eggs, and the third with seasoned panko breadcrumbs.
  4. Remove sticks from the freezer, coat each in flour, then dip into beaten eggs, and finally roll in panko breadcrumbs.
