Ingredients
  

For the Salad
  • 8 ounces Orecchiette pasta or your favorite pasta shape
  • 2 cups Roma tomatoes diced
  • 1 medium Red onion finely chopped
  • 1 cup Fresh basil chopped
  • 1 cup Shredded Parmesan cheese or Pecorino
  • 1 cup Mozzarella pearls or cubed fresh mozzarella
For the Dressing
  • 1/4 cup Olive oil or avocado oil
  • 2 tablespoons White balsamic vinegar or regular balsamic vinegar
  • 1 teaspoon Garlic powder or minced garlic
  • to taste Salt
  • to taste Ground black pepper

Method
 

Cooking and Combining
  1. Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions, about 10-12 minutes, until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooled pasta, diced Roma tomatoes, red onion, Parmesan cheese, and mozzarella pearls. Toss gently to mix.
  3. In a small bowl, whisk together the olive oil, white balsamic vinegar, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the salad and toss gently to coat all ingredients.
  5. Stir in chopped basil and adjust seasoning. Let chill in the refrigerator for at least 30 minutes before serving.
