Step-by-Step Instructions

  2. In a large bowl, toss the chicken with salt, pepper, and garlic powder.
  3. Heat a skillet over medium-high heat and add olive oil. Brown the chicken for about 4 minutes on each side.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Transfer the browned chicken to the baking dish with pineapple chunks. Pour the glaze evenly over the top.
  6. Cover with foil and bake for 25-30 minutes.
  7. Remove foil and bake for an additional 5-10 minutes to caramelize the glaze.
