  • 2 pounds Potatoes Yukon Gold or Russet, peeled and chopped
  • ½ cup Milk Whole milk recommended
  • 4 tablespoons Unsalted Butter Adjust for creaminess
  • 4 cloves Garlic Add a bit of braised garlic for flavor

Method
 

Braised Short Ribs Instructions
  1. Prepare ingredients: Peel and chop potatoes, peel garlic, and season short ribs with salt and pepper for 15 minutes.
  2. Sear ribs: Heat Dutch oven, add oil, and sear ribs for 4-5 minutes per side until browned.
  3. Sauté aromatics: In the same pot, sauté chopped onion and garlic until translucent.
  4. Braise ribs: Return ribs, add red wine, cover halfway with beef broth, add thyme and rosemary, and braise in oven for 2.5-3 hours.
  5. Make garlic mash: Boil potatoes and garlic until tender, then drain and return to pot.
  6. Mash and flavor: Add milk and butter to drained potatoes and mash until creamy.
  7. Serve: Plate mashed potatoes, top with ribs, and drizzle with braising sauce.
