  • 1 whole Lemon Juice from half used in the dish
For the Sauce
  • 0.5 cup White wine Dry white, like Sauvignon Blanc
  • 2 tablespoons Olive oil Extra virgin for better taste
  • 1 medium Onion Sautéed slowly for sweetness
For the Topping
  • 1 cup Panko bread crumbs Can be gluten-free
  • 2 tablespoons Melted butter Binds the topping
  • 1 tablespoon Olive oil
  • 1 teaspoon Red pepper flakes Adjust based on heat preference
  • 0.25 cup Fresh parsley Chopped, optional for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium heat. Add thinly sliced onions and sauté for 5-7 minutes until soft and translucent.
  2. Sprinkle red pepper flakes, salt, and pepper to taste. Pour in ½ cup of dry white wine and juice from half a lemon. Simmer for 2-3 minutes.
  3. Carefully place cod fillets atop the mixture. Season with salt and pepper. Let the fish soak in the sauce for a minute.
  4. In a bowl, combine 1 cup of panko breadcrumbs, 2 tablespoons of melted butter, 1 tablespoon of olive oil, and remaining lemon juice. Mix until breadcrumbs are coated, and fold in chopped parsley.
  5. Preheat oven to 400°F (200°C). Spread panko mixture over cod fillets and bake for 20 minutes.
  6. Remove from the oven and let rest for a few minutes. Garnish with parsley and lemon slices before serving.
