- Preheat your oven to 375°F (190°C) and grease a mini muffin tin with non-stick spray.
- Roll out the thawed puff pastry on a floured countertop and cut into 12 squares.
- Press each square into the greased muffin tin, forming a shell.
- Place a cube of brie cheese into each pastry cup.
- Spoon a small amount of cranberry sauce over each brie piece.
- If using, sprinkle candied pecans on top of each filled pastry.
- Bake for 15–18 minutes until golden brown and bubbly.
- Allow to cool for 5 minutes, then garnish with rosemary before serving.
