Preparation Steps
  1. Preheat the oven to 180°C (350°F) and grease a baking dish with olive oil.
  2. Season the cod fillets with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium heat, sauté diced onion until translucent, about 3-4 minutes.
  4. Add minced garlic and grated ginger to the onions, cooking for an additional 1-2 minutes.
  5. Pour in coconut milk, lemon juice, and lemon zest. Stir and let simmer for 5 minutes until slightly thickened.
  6. Place the cod fillets in the baking dish and pour the coconut lemon sauce over them.
  7. Bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork.
  8. Let the dish rest for a few minutes before serving, garnished with fresh herbs if desired.
