Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Gather your ingredients while the oven heats up.
- In a large 9x13 inch baking dish, combine finely diced onion, chopped red bell pepper, and uncooked long-grain brown rice. Sprinkle in the fajita seasoning and cayenne pepper, mixing well.
- In a separate bowl, whisk together chicken broth, canned green chiles, tomato paste, and olive oil until fully combined. Pour it over the rice mixture ensuring it's well coated.
- Gently fold in shredded chicken, black beans, and corn until evenly distributed.
- Cover with aluminum foil and bake for 65-70 minutes, until the liquid is absorbed and rice is tender.
- Remove foil and sprinkle shredded Monterey Jack cheese on top. Return to the oven for an additional 5-10 minutes until melted and bubbly.
- Let the casserole cool for 5-10 minutes before serving. Garnish with fresh cilantro, green onions, salsa, or avocado as desired.
