  • 1 can Green Chiles mild or omit
  • 2 tablespoons Olive Oil or substitute with other oils
  • 2 tablespoons Tomato Paste can substitute with fresh diced tomatoes
  • 1 cup Monterey Jack Cheese can use cheddar or dairy-free alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients while the oven heats up.
  2. In a large 9x13 inch baking dish, combine finely diced onion, chopped red bell pepper, and uncooked long-grain brown rice. Sprinkle in the fajita seasoning and cayenne pepper, mixing well.
  3. In a separate bowl, whisk together chicken broth, canned green chiles, tomato paste, and olive oil until fully combined. Pour it over the rice mixture ensuring it's well coated.
  4. Gently fold in shredded chicken, black beans, and corn until evenly distributed.
  5. Cover with aluminum foil and bake for 65-70 minutes, until the liquid is absorbed and rice is tender.
  6. Remove foil and sprinkle shredded Monterey Jack cheese on top. Return to the oven for an additional 5-10 minutes until melted and bubbly.
  7. Let the casserole cool for 5-10 minutes before serving. Garnish with fresh cilantro, green onions, salsa, or avocado as desired.
