- Preheat your oven to 350°F (175°C) and prepare an 8×5-inch loaf pan by greasing it or lining it with parchment paper.
- In a small bowl, combine ½ cup of brown sugar with 1 tablespoon of ground cinnamon. Mix together until evenly blended.
- In a large mixing bowl, whisk together 2 large eggs and ½ cup of granulated sugar until well combined. Add ½ cup of melted butter and 1 teaspoon of vanilla extract, stirring until fully incorporated.
- Gently stir in 1.5 cups of all-purpose flour, followed by 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt. Mix until just combined.
- Carefully fold in 2 cups of chopped apples into the batter, ensuring they're evenly distributed.
- Pour half of the batter into the prepared loaf pan and sprinkle ¾ of the cinnamon sugar mixture on top.
- Spread the remaining batter on top of the cinnamon-sugar layer, then sprinkle the rest of the cinnamon sugar over it. Use a knife to swirl the mixture slightly.
- Bake the loaf for 35-45 minutes until the top is golden brown and a toothpick inserted into the center comes out clean. Tent with foil if it browns too quickly.
