Method
 

Dough Preparation
  1. In a large mixing bowl, combine the bread flour and instant yeast.
  2. Gradually pour in the room temperature water while stirring with a wooden spoon or hand.
  3. Mix until no dry flour remains and the dough is sticky.
  4. Cover with a damp towel and let it rest for 30 minutes.
  5. Sprinkle the fine sea salt over the dough and fold it into the center until smooth.
  6. Transfer to a lightly oiled bowl, cover, and let rise for 2-3 hours, stretching and folding every 30 minutes.
  7. Place the dough in the refrigerator for 24-72 hours for cold fermentation.
  8. Remove from the fridge, let it sit for 1 hour, then shape into balls and rest for 30 minutes.
  9. Preheat your oven to 500°F, placing a pizza stone inside.
  10. Stretch each dough ball into a round shape and add your desired toppings.
  11. Transfer to the hot stone and bake for 7-10 minutes until golden and bubbly.
  12. Remove from the oven, cool slightly, slice, and enjoy!
